Super Easy Kale Recipe

Anyway! Just thought I’d drop by real quick to share with you what I’ve been whipping up in the kitchen. My manang went on vacation and wont be back home in 2 weeks. That means that all the cooking and cleaning is on me whew! Salute to full time moms who can juggle all these everyday tasks! What you do is harder than any job! We’re on our 10th day without her and I miss having not to worry about all the small things, but who am I to complain. Life is great, I am blessed to have a space to live and a husband, and bubu to love. Plus, I think that things like this make us better. So here’s my easy recipe! Enjoy!

What you’ll need:

2 cups chopped up kale
1 cup oyster mushrooms
1 cup dry quinoa
2 tbsp miso paste
3 cloves garlic minced
1 pinch salt
1 tbsp sesame oil

How to prepare:

Step 1
Cook the quinoa with equal parts water.

Step 2
In a separate pot, sauté the garlic, miso paste, oyster mushrooms on medium heat. Once cooked, add in the chopped up kale. Turn of the heat as the kale starts to turn a deep green.

Step 3
Assemble everything in a bowl. First layer the quinoa as your base, then pour in your kale and mushrooms. For added flavor add a dash of sesame oil, and salt to taste.

Step 4
Take photo of your food as seen above.

Step 5
and this is the best part — EAT 😋

Eating healthy is not as complicated as it looks. All you need are fresh ingredients, and a little bit of time and you’re good to go! I usually have this for lunch, or keep it as baon for when I go to the studio. Feel free to modify this recipe based on your dietary requirements. Bon appetit!
